Roasted Roots Recipe

I was especially looking for bright and interestingly shaped root vegetables to roast and present on a platter for a catering job when a paid a visit to the Santa Monica Farmer’s Market a few weeks ago. I was able to find beautiful varieties of Thumbelina (aka Parisian) Carrots, Ninja, Watermelon, and Green Meat Radishes, as well as Baby Indian Eggplant grown and harvested by Weiser Family Farms.

Roasted Maple Tamari Nut Mix

I began making this particular recipe about 3 years ago. Inspired by a client at the time who was a serious snacker. She craved anything crunchy. I was extremely fortunate that she had a wonderfully curious palate. Sweet, salty, sour, spicy... she was all game and I love playing with spices that challenge me to find the balance between them all. I have to be honest though... My balance is always a little more spicy than not. 

I appreciate this is simple snack because you just can't mess up. Unless you burn the nuts in the oven which I have done many many many times. I'm a pro-status, multi-tasker in the kitchen but when things are heatin' up in the oven. PAY ATTENTION. 

Feel free to adjust the measurements of spice to your own liking. Cooking is intuitive. Cooking is feeling. Sometimes the best recipes, just like art come to life when one is feeling most free spirited.
